Cozy Weather=Comfort Food


First of all I want to thank you all for helping me reach 6000 Views on my Blog. It makes me happy to see that you guys are responding well to this blog. Many Thanks to all of you!
I wanted to share with you guys some raw vegan recipes this whole month. Because I know we are getting close to Thanks Giving and Christmas....These Comforting Holidays and Cozy Weather makes us all want to cheat a little with our regimen. And because I know it is NOT easy I am letting you know I am here with you, supporting you everyday to stay fit, and maintain your goals and to overall make BETTER choices. Let's not forget about ALL the hard work you have done to get here! I am continuing my Raw/Vegan Lifestyle and I want to make sure you guys are open to this as well. Only because it is so EASY to make some of these recipes. So Cheers to Good Health and Props to your Determination. I have received many emails, messages from people who are continuing their juice fasting. I am rooting you on and supporting you all the way! Here I share with you some of my personal favorite Raw Cookies Recipes. I am coming up with my own soon! I hope you guys enjoy making them and devouring them as much as I did =)

Cocoa Date Raw Cookies

about 3/4 cup raw cashews
8-10 medjool dates
3 Tablespoons shredded unsweetened coconut
1-2 Tablespoons raw tahini
2 Tablespoons agave or maple syrup
2 Tablespoons cocoa powder--(it occurs to me now that cocoa powder is likely not considered a raw ingredient, ah, well, make it without if you feel moved to banish chocolate, I do not have that power)

De-pit the dates by cutting a slit in one side and pressing the pit out of it.

Process the raw cashews until they are fine and evenly ground in a food processor. Do this by pulsing the processor, rather than just letting it run, to avoid getting a nut butter consistency. Aim for a powdery, ground consistency to the nuts.

Add all of the remaining ingredients and process until smooth and well combined, scraping down the sides of the food processor as necessary.

Roll into 1 inch or so balls and place them to chill in the fridge or let rest at room temperature before serving to firm them up and help them hold together. Makes about 12.


Suanny's 5 Minute Raw Vegan Oatmeal Raisin Cookies (Gluten, Soy, & Dairy Free)

1/2 c dry oats (most oats are not technically raw but source true raw oats if your heart desires)
1/4 c pitted medjool dates (about 4-6 juicy, Dates.)
1/4 c raisins
1 Tsp Cinnamon
Optional: Dash of vanilla extract (I say, yes!)
Yields: 12 small cookies, feel free to double the recipe

-First, lightly grind or pulse the oats & then add the medjools in your Food processor
-Then add in the raisins & cinnamon, vanilla extract if you choose. Blend again.


-Here's what your oats-medjools-raisins dough looks like

Take your dough out...


...and form into cookie patties or balls



Optional Add-Ins & Extras:
Coconut flakes at the end
Coconut flakes in the mixture
Put Chocolate/Carob Chips in the mixture or hand-press some in at the end
Roll in carob/cocoa powder/cocoa nibs
Use goji berries instead of raisins or another dried fruit like cranberries, craisins, apricots
Omit the dates and just use 1/2 c raisins if you don't have dates
Dash of agave or coconut oil if mixture is too dry

Voila, enjoy!

Orange Barley Cookies.


Ingredients:

1½ cup Barley, Soaked overnight.
One orange
1 teaspoon Orange zest
1 tablespoon vanilla
1 cup Dates
.33 cup water
1 cup chopped walnuts

Preparation:

Put all in blender and mix thoroughly.

Place batter on teflex or solid sheet. Dehydrate for appoximately 8-10 hours.
Turn cookies after 4 hours.

Cran-Orange Cookies for Christmas!

Makes about 40 cookies:

Ingredients:

3 cup dried, unsweetened coconut flakes
¾ cup Hemp seeds
1 cup Maple Syrup
4 tablespoon Bee Pollen
2½ cup Orange Juice
Zest From 2 Oranges
.33 cup Coconut Butter
1 tablespoon vanilla extract or 1 vanilla bean
½ teaspoon sea salt
1 cup Dried Cranberries , (If to tart, soak in apple juice)

Preparation:

Mix all ingredient together in a bowl. Spoon out shape using a tablespoon. Between each scoop wet spoon with warm water to prevent sticking. Dehydrate at 110 degree F for 8 hours. The cookies should still be a little moist in the middle. (after it’s finished it seems to continue to harden more at room temperature)


Walnut Carob Cookies

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 3/4 cup raw walnuts, cashews or pecans
  • 1/4 cup raw carob powder
  • 1 cup raisins

Preparation:

Process all ingredients in a food processor until fine and sticky. Shape into balls and enjoy!

If you can't get the mixture to hold together, add a few more raisins and a tablespoon of water.
